This VEGETABLE MANDI OR KAIKARI MANDI  is one of the famous dish in chettinad side functions. It suits well with curd rice, idly, dosa
                                                

Ingredients

carrot, broad beans - 1 cup each
coconut,onion.garlic - 1/4 cup each
cowpea ( soaked in water for 4 hours ) / thattai payaru / kaaramani - 1 cup
green chili - 2
brinjal - 4
baby corn - 3
( you can add any vegetables - potato, beans, dried mango or raw ) If you add mango, no need to add tamarind
rice water - 1 cup - ( The water we get while washing rice ) it is easy to make this dish when you prepare idly batter. I took this water from 4 cups of idly rice. In tamil it is arisi mandi.
tamarind - amla size
rice flour - 1 tsp
chili pdr, cumin, fennel pdr - 1/2 tsp each

Seasoning

mustard seed, urad dal - 1 tsp each
dry chili - 1




Taking rice water


 

1. Mix rice flour with water. 2. pressure cook both cowpea & baby corn . 3. Let it cook for 2 sounds.

 

4. Add seasonings in hot oil.  5. Saute onion, garlic, green chili till it gets tendered

 
 6. Add all vegetables with sauteed onions
 

7. cook these vegetables with partially pressure cooked cowpeas.
 

8.add rice flour, rice water, spices, tamarind, & salt. Rice flour gives thickness to this curry.
 

 

 

9.Let it cook for 2 sounds.
 

10. All veg are cooked well . Let it boil 5 minutes to get thick consistency. Leave it as it is to have this with idly or dosa. This is very suitable recipe to have with curd rice when you go for picnic.
